0.5 PoundBroccoli
Steamed
½ cupunsalted butter
melted
1 teaspoonkosher salt
or to taste
1 teaspoonblack pepper
or to taste
1 teaspoongarlic powder
or to taste
½ cupheavy cream
¼ cupsour cream
8 ozSharp Cheddar Cheese
divided
8 ozColby Jack Cheese
divided
0.25 CupChives
diced
smoked paprika
Instructions
Step 1
Preheat oven to 350 F
Step 2
Clean & Pat Dry Potatoes
Step 3
Place potatoes on a lined baking sheet. Lightly coat each potato with oil and lightly sprinkle salt on each potato.
Step 4
Bake for 1 to 1 ½ hours or until potatoes are done.
Step 5
Slice a then layer off the top of each potato and remove the inside potato filling and add to a bowl. Leave some of the potato inside the skin to maintain the structure of the potatoes.
Step 6
With potatoes in a bowl, add butter, salt, black pepper, garlic powder, heavy cream, sour cream, 6 oz cheddar cheese, 6 oz colby jack cheese, broccoli and chives. Mix everything well.
Step 7
Add filling back into each potato, then add the remainder of cheese on top. Sprinkle smoked paprika on top and bake at 375 F for 15-20 minutes.
