Instructions
Step 1
Heat some vegetable oil in a skillet over medium heat, and toast the tortillas evenly on both sides until crispy.
Step 2
Place 4 of the tortillas on a parchment lined or well greased baking sheet.

Top each of the 4 tortillas with the refried beans.
Step 4
Brown the ground beef in a skillet over medium high heat until completely cooked through. Drain the excess grease.

Sprinkle the taco seasoning over the ground beef, and stir to combine well.

Spread a layer of the meat over the refried beans on the tortillas.

Place another crispy tortilla on top of each of the topped ones.

Spread a layer of enchilada sauce on top of each Mexican pizza, and top each pizza with a the cheese.

Bake for 10 minutes, or until the cheese has melted.

Remove, and top with the tomatoes and green onions before serving.

To add more spice to the Mexican pizza, you can increase the amount of taco seasoning mix, add diced jalapeños or other hot peppers to the ground beef, or use a spicier enchilada sauce.

Arrange the chips on the baking sheet, layer the toppings, and bake until the cheese is melted.

If you want to add more spice without using hot sauce, consider using diced jalapeños or serrano peppers as one of the toppings.
