Beef filling
Step 1
Cut the padrón peppers in half and remove the cores.
Step 2
Chop the onion and mince the garlic.
Step 3
Heat 1 tbsp of olive oil in a pan. Leave the heat on medium high. Add the peppers and fry for about 2min until they become slightly brown. Then remove from the pan.
Step 4
Add the remaining oil to the pan and reduce the heat to medium. Add the onion and garlic and fry for about 2-3min until slightly brown and soften.
Step 5
Add the beef and mince it with a wooden spoon. Fry for another 2-min.
Step 6
Add the seasoning and mix well.
Step 7
Now add the canned tomatoes, corn, kidney beans and peppers. Mix everything well. Reduce the heat to low and let simmer for 5min.
Cones
Step 8
Cut the tortilla wraps in half. Then roll up one half from one side to the other. The wrap will shape into a cone.
Step 9
Repeat with the other tortilla halves.
Step 10
Fill the tortilla cones with the beef filling and place them into a round baking dish.
Step 11
If there's any filling left, place it in-between the cones.
Step 12
Top the cones with the cheese.
Step 13
Bake them in the oven at 200 degree upper-/lower heat for about 10min. Enjoy!
