Spicy Sausage rigatoni

Ingredients
4 servings
¼ cupolive oil
good quality
8 clovesgarlic
peeled and chopped
salt
to taste
pepper
to taste
1 poundSpicy Italian Sausage
fresh, removed from casings
1onion
peeled and diced
3 stalkscelery
peeled and diced
3 cupsMarinara Sauce
Homemade, or store bought
1 pounddried rigatoni
Calabrian Chili
Crushed, to taste
Parmigiana-Reggiano
Grated, for garnish
Instructions
Step 1
n a large saucepan over medium heat add the olive oil and heat until warm.
Step 2
Add the chopped garlic, cook until fragrant.
Step 3
Add a dash of salt and pepper.
Step 4
Add the Spicy Italian sausage and cook on medium – high heat until it begins to brown, breaking up the sausage as it cooks.
Step 5
When the sausage is about ¾ of the way cooked, add the onion and celery and continue to cook.
Step 6
Add another dash of salt and pepper.
Step 7
Once the sausage is browned and cooked through, add the marinara and stir well.
Step 8
Simmer on medium – low heat for about 15 minutes.
Step 9
While the sauce is simmering, bring a large pot of salted water to a boil.
Step 10
Add the rigatoni and cook until al dente, about 4 minutes for fresh pasta and 8 to 9 minutes for dry pasta.
Step 11
Using a fine mesh strainer or slotted spoon, add the pasta to the sauce and toss well. If the sauce is too thick, add a little of the pasta water.
Step 12
Add the crushed Calabrian chili to taste.
Step 13
Divide the pasta and sauce among the plates. Garnish with freshly grated Parmigiana-Reggiano.
Step 14
Serve immediately.
