Instructions

1. Preheat Oven to 350

2. Spray 8x11 casserole dish with cooking spray

3. Thinly slice the zucchini or summer squash into rounds and arrange in rows in the casserole dish. Rows should be straight and tight.

4. Wisk eggs and Greek yogurt in a separate bowl.

5. Once whisked, add in all remaining ingredients to mixture and whisk.

6. Pour evenly over zucchini.

7. Add additional cheese to the top (optional)

8. Cover with foil.
Step 9
9. Bake in oven for 25 minutes covered, then remove cover and bake for an additional 35 minutes or until sides are firm and crispy with the top golden brown.

10. Cool and enjoy. This is delicious cold or hot!
