Instructions
Step 1
In a saucepan, combine the sugar and water. Bring to a boil over medium heat, stirring until the sugar has completely dissolved. Let this simple syrup cool.

Place the watermelon cubes in a blender or food processor. Blend until smooth.

Add the cooled simple syrup and lemon juice to the blended watermelon. Blend again until well combined.
Step 4
Pour the mixture into a shallow dish and freeze for about 2 hours, or until it's firm around the edges.
Step 5
Stir the icy parts into the middle, then freeze again. Repeat this process every 30 minutes for about 3 hours, until the sorbet is fully frozen.
Step 6
Let the sorbet sit at room temperature for a few minutes before scooping. Serve immediately.
