This recipe was developed by me after making traditional poached pears a few times. While I like them, and will make them sometimes, I wanted something different, so I thought “If you use wine to make them, why couldn’t I use champagne (my favorite)?” and then wanted some orange flavor and added in the marmalade

Step 1
Peel pears and slice bottom so that the pears will sit upright and flat in a large saucepan. Prepare pears by using an apple corer and clean out the interior stem and seeds, leaving the stem on the pears. Mix sugar and water until sugar dissolves. Place in saucepan and mix in orange marmalade. Place pears in saucepan so that they will stand upright. Fill with champagne and add in water to cover pears. Stand cinnamon stick in the middle of the pears. Place a small dish on top of pears to hold them down, as pears like to float. Simmer on middle/low heat until pears are cooked, about 25-30 minutes. When cooled, place pears in the cooking liquid in the refrigerator until chilled
