Step 1
1. With a hand mixer, prepare filling by whipping heavy cream, sugar, and vanilla extract in a mixing bowl. Refrigerate until ready. Dice strawberries and set aside
2. Mix rice flour and sugar together in a bowl 3. Add in strawberry milk while whisking the mixture until yogurt consistency
4. Cover with plastic wrap and poke holes to vent and microwave for 3 min in 1 min increments

5. Add butter to mixture and mix well with spatula. Let it cool down long enough to knead by hand 6. Knead and stretch mochi until smooth and add flour to surface in order to avoid sticking. Divide dough into 9 pieces
7. Use a roller to flatten mochi, add cream filling strawberry pieces and pinch to close
8. Decorate with candy melts if desired.
