1. Using a vegetable peeler or mandolin, thinly slice the courgettes and pat them dry thoroughly.

2. In a small bowl, mix the olive oil, lemon juice, Mediterranean spice mix (or your preferred spices), garlic granules, chilli flakes, and fresh thyme leaves.

3. Lay the courgette strips flat and brush them with the oil mixture.

4. Cut the halloumi cheese into 15 pieces according to the width of the courgette strips.

5. Take one piece of cheese and wrap a courgette strip around it.

6. Skewer the cheese-wrapped courgette strip, followed by a cherry tomato, another cheese-wrapped strip, tomato, and another cheese-wrapped strip using two skewers to secure them.

7. Preheat a greased grill and place the skewers on it. Grill until golden, turning them occasionally and brushing them with the oil mixture.

8. Once ready, drizzle the skewers with balsamic vinegar and garnish with additional fresh thyme leaves.
