Instructions
Step 1
To a saucepan add your cherries, sugar and lemon juice. Cook for 10 minutes, adding a little water if the mixture starts to dry out.
Step 2
Then add your cornstarch dissolved in water and stir for 1-2 minutes until thick.
Step 3
Use ready rolled puff pastry to cut out squares. Brush the edges with egg wash (one whisked egg) and add the pie filling to the centre.
Step 4
Press the edges closed with a fork and brush the top with egg wash. Using a scissors to snip the centre twice on each pastry for an even bake as shown in the image.
Step 5
Sprinkle over Demerara sugar or brown sugar if you don’t have any.
Step 6
Bake in a preheated oven at 190C for 10-12 minutes.
