2 Tbsp. extra-virgin olive oil
2 Tbsp. balsamic vinegar
1 Tbsp. honey
2 tsp. adobo sauce (from a can of chipotle chiles in adobo sauce)
1/2 tsp. kosher salt (or more to taste)
1 lb. Brussels sprouts, trimmed and halved
Preheat oven to 450°F. In a large bowl, combine olive oil, balsamic, honey, adobo sauce, and salt; mix to combine. Add Brussels and toss to coat. Empty out onto a large rimmed baking sheet and arrange Brussels cut-side down, avoiding any overlap. Roast for 15 to 20 minutes, shaking the pan once halfway through, until deeply caramelized and crisp. Taste and season with a pinch more salt, if desired.
