Instructions

Step 1
Peel the garlic, and place in a food processor (if using a stick blender, just add all ingredients + blend).
Step 2
Add the salt, and pulse until a course paste forms. Scrape down the sides.
Step 3
While the processor is running, slowly stream in 1-2 tbsp of oil, then stop + scrape down the bowl.
Step 4
Slowly add another 1-2 tbsp of oil while processing - the mixture should begin to look creamy.
Step 5
Continue emulsifying with 1tbsp of oil at a time & then alternate with 1tbsp of lemon juice.
Step 6
Once all the oil & lemon juice is incorporated, you should have a fluffy texture.
Step 7
If the toum splits, add 1-2tbsp aquafaba.
Step 8
Serve with wraps, shawarma, and store in the fridge (garlic intensity will lessen over time).
