Instructions
Step 1
Preheat your oven to 180°C (350°F) and line a cupcake tray with paper liners.
Step 2
In a mixing bowl, whisk the egg whites until stiff peaks form. Gradually add the sugar and continue to whisk until the mixture becomes thick and glossy.

Add the egg yolks and gently fold them into the mixture until just combined.
Step 4
Sift the flour into the mixture and gently fold until just combined.
Step 5
Add the oil and milk, and continue to fold until just combined.
Step 6
Fill the cupcake liners about two-thirds full with the batter.
Step 7
Bake for 20-25 minutes or until a toothpick inserted into the center of a cupcake comes out clean.
Step 8
Allow the cupcakes to cool completely.
Step 9
To make the glaze, whisk together the powdered sugar and lemon juice until you reach the desired consistency.
Step 10
Once the cupcakes are cooled, drizzle the glaze over the top of each cupcake.
Step 11
For decoration, you can add a candied cherry on top, and you’re ready to serve!
