Instructions

Step 1: Make the Crust

Step 1
1. Combine Ingredients: Place the flour, salt, powdered sugar, and 1 egg in the bowl of a food processor. Mix on low speed just until the egg is incorporated.
Step 2
2. Add Butter: Add the soft butter pieces and pulse for a few seconds until the dough begins to come together into a ball.
Step 3
3. Chill the Dough: Be careful not to overmix. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes to make it easier to handle.
Step 4
4. Roll Out and Bake: Preheat your oven to 180°C (350°F). On a lightly floured surface, roll out the dough to fit a 9-inch pie dish. Place the dough in the dish, pressing it gently to fit. Trim any excess dough around the edges.
Step 5
5. Blind Bake: Prick the crust with a fork, cover with parchment paper, and fill with pie weights or dried beans. Bake for 10-12 minutes, then remove the weights and parchment paper and bake for another 5 minutes until the crust is lightly golden. Set aside to cool slightly.

Step 2: Prepare the Filling

Step 6
1. Mix Wet Ingredients: In a large bowl, whisk together the pumpkin puree, brown sugar, and 2 eggs until smooth.
Step 7
2.Add Cream and Spices: Add the heavy cream, cinnamon, ginger, aniseed powder, and nutmeg. Stir until the mixture is well combined and smooth.

Step 3: Assemble and Bake

Step 8
1. Pour the Filling: Pour the pumpkin filling into the pre-baked crust, spreading it out evenly.
Step 9
2. Bake the Pie: Bake at 180°C (350°F) for 45-50 minutes, or until the filling is set around the edges but still slightly jiggly in the center.
Step 10
3. Cool and Serve: Let the pie cool to room temperature, then refrigerate for 2 hours before serving. This helps the filling set fully.
