Ingredients
6 servings
8 cupsfat-free chicken broth
1boneless skinless chicken breast
1onion
finely chopped
1carrots
medium, peeled and cut into small pieces
1celery stalk
medium, sliced
Kale
Chopped, I like to add a lot
1 Tbspfresh basil
chopped
¼ tsporegano
¼ tspfreshly ground black pepper
1bay leaf
1 cuporzo
¼ cuplemon
Juice of, medium
Instructions
Step 1
Place all of the ingredients except the lemon juice and orzo in a 4-quart pot. Cover and bring to a boil over high heat.
Step 2
Reduce the heat to low, cover, and simmer. Stir occasionally, for 30 minutes, or until the vegetables are tender. Then add the orzo is cooked al dente (7-10 minutes).
Step 3
Remove the chicken breast from the soup, slice into strips, and return to the pot. Add the lemon juice, stirring well to mix. Remove and discard the bay leaf.
Step 4
Ladle the hot soup into individual bowls and serve immediately.
