Instructions

Step 1
Optional: 2 racks (4-5# each) St. Louis ribs cut into 1-2 rib segments. Optional: red food coloring
Step 2
Mix hoisin-ginger in nonreactive bowl. Pour into ziploc bags, reserving 1/2 cup for basting. Add ribs to bag and marinate 3 hours-overnight (better).
Step 3
Heat grill to 275. Remove ribs from marinade and discard. Place ribs over indirect heat, cover and cook 2-3 hours, basting 3 times with reserved marinade.
Step 4
Drizzle ribs with extra honey and quickly char over direct heat to caramelize.
