*I made a carrot top pesto to go with this and it was great. Carrot tops, finely chopped, roasted cashews fine chopped, garlic, lemon juice, olive oil, seasoning.

Instructions
Step 1
Heat oil in heavy bottomed pan on medium. Add onion with a pinch of salt, cover pot and sauté on low about 20 min til very soft and sweet.
Step 2
Add garlic and ginger, sauté 1 min, add spices and sauté another minute.
Step 3
Add carrots and stock and big pinch of salt. Bring to boil, then turn down and simmer about 20 min til carrots are very tender.
Step 4
Blend til smooth and season to taste
