Instructions
Step 1
1. Preheat oven to 180 degrees and grease two small-medium sized oven proof dishes




Step 2
Drain and finely dice artichokes > place in large bowl


Step 3
Dice onion and shallots > lightly sauté in small frypan with butter until softened > add to large bowl

Step 4
Grate cheeses > add to artichoke mixture


Step 5
In a separate bowl, whisk egg


Step 6
Add thickened cream and mayonnaise to egg mixture egg and whisk to combine

Step 7
Add egg mixture and all remaining ingredients to artichoke mixture. Season with salt and pepper
Step 8
Spoon into baking dishes and cook for 25-30 mins at 180 degrees - if you prefer darker crispy top, cook slightly longer. Rest for 30 mins



Step 9
Optional, while resting to room temp, microplane small amount of parmesan.
