Instructions

Step 1
Pre-heat a large skillet or electric griddle over medium-high heat.
Step 2
In a medium size bowl whisk together eggs, milk, oil and sugar. Add all the dry ingredients and whisk to combine. Let rest for a couple of minutes.
Step 3
Grease griddle or skillet with a little butter (or fat of your choice). Using an 1/8 cup measuring cup, pour batter onto hot griddle or skillet. Once small bubbles begin to form, flip pancakes over and cook a couple more minutes. Remove to a serving plate and repeat with remaining batter until all batter is used.
