Combine flour, salt, sugar, baking powder, and baking soda into a bowl and whisk together.

In a different bowl, add your melted butter to the egg and whisk until combined.

Next, add your cup of buttermilk (save the 1/4 for later), vanilla extract, and brown sugar to your egg mixture and whisk until smooth.

Add your wet ingredients to your dry ingredients and whisk away (be sure to scrape the bottom and sides of your bowl as you're whisking).

Your batter should be pretty thick at this point, so grab your 1/4 cup of almond milk and combine it with the extra 1/4 of buttermilk in a separate bowl (you can add an additional dash of vanilla here too, I do).

Add the buttermilk mixture to your batter depending on your desired thickness. I add about half of the mixture for thicker pancakes, but measure with your heart!

Let the batter rest for at least 20 minutes!

Pour about a 1/2 cup of the batter into a well-oiled cast iron pan, and flip when you see bubbles (1-2 minutes depending on the temperature of your skillet). I prefer my pancakes on the darker side, so I'll flip them when I see the edges darkening.
