Instructions
Step 1
In a quart mason jar, combine the blackberries and sugar. Use a wooden spoon or its handle, whichever fits, to smash the blackberries right in the jar. You don't need a mush, but there should be no whole blackberries left.
Step 2
Cover the jar with a two piece mason jar lid and shake to evenly distribute the sugar.
Step 3
Let the blackberries and the sugar sit at room temperature for 1 hour, then transfer to the refrigerator for 3 days.
Step 4
At the same time that you combine the blackberries and the sugar, place the fresh sage in a pint mason jar, then cover it with the apple cider vinegar. The vinegar and herbs can infuse at room temperature.
Step 5
After 3 days, pour the sage and vinegar mixture (don't worry, we'll strain it later) into the jar with the blackberries and sugar.
Step 6
Sake the vinegar with the blackberries and sugar to dissolve any remaining sugar.
Step 7
Once all the sugar is dissolved, position a fine mesh strainer over a medium bowl.
Step 8
Strain the syrup, gently pressing the blackberry solids to extract as much liquid as possible without forcing solids through the sieve.
Step 9
Cover, label and refrigerate the strained syrup in a pint mason jar until ready to use.
Step 10
Add to your favorite soda or cocktail and enjoy.
