Step 1
In a large bowl, combine powdered sugar, eggs, butter, oil, almond extract, pudding mix, and food coloring; mix well. Lightly spoon flour into measuring cup; level off. Add flour, baking soda, cream of tartar, and salt; mix well. Stir in pecans.
Step 2
Cover with plastic wrap and refrigerate 1 hour for easier handling.
Step 3
Preheat the oven to 375 degrees F. Shape dough into one-inch balls and roll in sugar. Place 2 inches apart on ungreased cookie sheets. Bake for 10-15 minutes or until edges are golden brown. Remove immediately from cookie sheets.
