Step 1
If using a pestle and mortar, begin with adding the pine nuts and garlic clove. Crush and grind until smooth. Then had the basil and do the same. Pour half the olive and mix into a paste. Then add the pecorino, mix and keep pouring in olive until you have a thick sauce.
Step 2
If you're using a food processor, add all of the ingredients apart from the olive. Blend whilst slowing add the olive oil until you have the right consistency.
Step 3
Put a pan of water onto boil and salt heavily. Once boiling, add the linguine and cook to al dente following the package instructions (roughly 8 minutes.
Step 4
Get a pan on a low heat, add a know of butter and tbsp of olive oil, once melted add the pesto and stir. Then add the pasta straight from the water along with a half cup of the pasta water.
Step 5
Stir until well combined and you have a thick, creamy sauce.
Step 6
Serve and enjoy!
