Chocolate Chip Banana Bars

Ingredients

9 servings

3 overripe bananas (about 400g)

1 cup (80g) quick oats
1 cupquick oats
½ cupkodiakcakes mix
2 eggs

1/4 cup (60ml) unsweetened almond milk
¼ cupunsweetened almond milk
1/4 cup (62g) unsweetened applesauce
¼ cupunsweetened applesauce
3 Tbspswervesweetie brown sugar replacement
or your choice zero calorie sweetener, can also use brown sugar
1 tsp cinnamon
1 tspcinnamon
1 tsp baking soda
1 tspbaking soda
1/8 tsp salt
⅛ tspsalt
6 Tbsp (84g) chocolate chips (I used Lily’s semisweet chips)

Instructions

Step 1
1. Preheat oven to 350 degrees.
Step 2
2. Line a 8”x8” square aluminum pan with parchment paper or grease pan. Set aside.
Step 3
3. Put all ingredients except the chocolate chips in a food processor or blender and mix well. (Note: can also hand mix ingredients in a bowl)
Step 4
4. Add 3-4 Tbsp of the chocolate chips in and stir by hand (do not use the food processor or blender on them!).
Step 5
5. Pour batter into pan.
Step 6
6. Sprinkle the remaining chocolate chips on top.
Step 7
7. Bake for 30-35 minutes, until the middle of the bars are firm and not too jiggly when you wiggle the pan.
Step 8
8. Let cool for 10 minutes before serving.
