Instructions
Step 1
Put medium saucepan over medium heat and add olive oil.
Step 2
Sauté onion and garlic until translucent, about 4 minutes.
Step 3
Add carrot, tomatoes, and vinegar and bring to a simmer.
Step 4
Simmer foe 25 minutes until carrot chunks are soft.
Step 5
Transfer mixture to food processor and purse until smooth.
Step 6
Return sauce to saucepan and stir in basil, oregano, thyme and red pepper flakes.
Step 7
Simmer for 15 minutes.
Step 8
Season with salt and pepper.
Step 9
Serve immediately, store in fridge for up to 4 days or freezer for up to 1 month.
