Ingredients
4 servings
600gdiced chicken breast
½ tspblack pepper
1 tspgarlic powder
1 tsponion powder
50mllight soy sauce
300gfrozen mixed vegetables
2eggs
30gspring onion
560gwhite rice
cooked day old
10mlsesame oil
1 tspcornflour
sesame seeds

Sauce
Instructions
Step 1
Dice chicken, add pepper, garlic and onion powder and 25ml soy sauce. Mix and set aside.
Step 2
Add 300g mixed frozen veg and 2 eggs to a pan. Mix and cook.
Step 3
Add 20g spring onion (white bits only), then add the cooked rice and 25ml light soy sauce.
Step 4
Mix and take off the heat.
Step 5
Add 10ml sesame oil to the pan and mix.
Step 6
Add 10g spring onion (green bits) to pan and mix again.
Step 7
In a bowl, mix together all the sauce ingredients.
Step 8
In a separate pan, cook chicken on medium-high heat for 4 mins each side (or until cooked and brown).
Step 9
Add sauce to the chicken, then mix together the cornflour with 1/2 cup water and add to chicken.
Step 10
Mix until thick then add to egg fried rice.
Step 11
Add garnishing (sesame seeds and left over spring onion).
Step 12
Finished.
