Instructions

Step 1
Sweat onion over very low heat with 1 teaspoon salt for 5-10 minutes, until wilted.
Step 2
Increase heat and add rice, 1/2 cup olive oil, scallion, and 1.5 tablespoons lemon juice. Sauté for 2 minutes.
Step 3
Add parsley, dill, salt, and pepper. Sauté for 4 minutes.
Step 4
Set aside to cool.
