Instructions

Preparing the veggies and garnishing

Step 1
Wash the veggies and let it dry. (Remember to only wash ones you’re gonna use only) . Chop the green onion, yellow onion, jalapeños, and lime. Put them on a dry towel so it can dry and not spoil.

Charring

First chop off both end of the onions, leaving the skin on . Then skin the ginger and slice to medium thick slices.

Warm up a pan by heating it only, no need to add oil. After add the onions in. Once it is charred you will see burnt marks on the skin. Don’t let it burn way too much otherwise the broth will be dark. Take out the onion and do the same with the ginger.

From the pho spice package, only use 1 star anise and the coriander seeds . Char those on the same pan . Then throw it in a soup bag.

Preparing the broth

Start by washing the whole chicken with water and salt. Massage and scrape the s chicken clean using fingers. After drain the water and let the chicken dry.

Pour in 16 cups of water. Wait for it to boil and throw in the whole chicken, including the head and feet. Throw in the charred onion, ginger, and pho spices.

While the chicken is cooking, remember to take out all the skums from the soup .

In a separate bowl, boil some water. Once it boils, throw in the chicken breast.

It will take 40 minutes for the whole chicken to cook properly. After 40 min, take out all the chicken bones and head and put it into a separate bowl to dry and cool down. Do the same for the chicken breasts as well.

Leave the onions , ginger and pho spices in the soups while you add the salt, sugar, rock sugar, chicken bouillon, msg, and fish sauce .

Add in 1 can of chicken broth . And then using that can, fill it up with hot boiling water and add those into the soup.

Using a floss string, tie the whole cilantro so it doesn’t separate into pieces in the soup. After add it into the broth. This will create more flavoring

Keep adding half a cup of water at a time and add the seasoning. Adjust to your liking .

Simmer the soup for another 30 minutes.

In a separate bowl, add in water. Wait for it to boil and add in the pho noodles . Follow the packaging instructions. Once the noodles are done cooking, rinse it in cold water and let it dry.

For the last 30 min, add in the bo vien (beef balls) into the soup

Shred both of the chickens

Assemble the noodles, chicken, and veggies. Pour in soup and enjoy !
