Lay out puff pastry to thaw. Slice tomatoes thinly. Layer in colander in sink, salting each layer as you go. Set aside. Preheat oven to 400. Combine cheeses and seasonings in a bowl. Place parchment paper on a baking sheet, and roll out the puff pastry. Roll over the edges back inward to create a ridge around the exterior of the pastry dough. Spread the ricotta mixture out to the ridges evenly. Press excess moisture out of tomatoes with paper towels, then layer on top of the ricotta. Mix the egg and a teaspoon of water together in a bowl, then brush the egg wash over the outer ridge of the puff pastry dough. Bake for 15-20 minutes. Garnish with fresh basil and a dusting of Parm.
