Instructions
Step 1
In a small bowl, combine 7g of dry instant yeast and 1 teaspoon of sugar. Add 150ml of warm water, and let it sit for about 5 minutes until it becomes frothy.
Step 2
In a large mixing bowl, combine 400g of all-purpose flour and 30g of sugar. Pour in the yeast mixture, add 1 egg, and 50g of soft butter. Mix until a dough forms.
Step 3
Knead the dough for about 10 minutes until it becomes smooth and elastic. Place it back in the bowl, cover with a damp cloth, and let it rise for about 1 hour, or until it has doubled in size.
Step 4
In a small bowl, mix 80g of soft butter with the zest of 1 lemon until well combined.
Step 5
Roll out the dough into a rectangle on a floured surface, about 12x18 inches.
Step 6
Spread the lemon butter mixture evenly over the dough.
Step 7
Starting from one of the longer edges, roll the dough into a log.
Step 8
I recommend placing your rolled dough in the freezer for 15 minutes, then use a piece of food-grade string to cut your rolls! You can also use a knife, but I personally find the trick with food-grade string gives you a cleaner cut :)
Step 9
Place the rolls in a greased baking dish, leaving a little space between each roll. Allow the rolls to rise for an additional 45 minutes while the oven preheats.
Step 10
Preheat your oven to 180°C (350°F). Bake the rolls for 20-25 minutes, or until they are golden brown on top.
Step 11
While the rolls are baking, prepare the frosting. In a mixing bowl, combine 250g of cream cheese, 1 tablespoon of lemon juice, 1 tablespoon of milk, and 30g of powdered sugar. Mix until smooth.
Step 12
Once the rolls are out of the oven and have slightly cooled, spread the cream cheese frosting evenly over them.
Step 13
Serve your delicious lemon rolls warm and enjoy!
