Peaches and cream crumble muffins

Peach season is upon us and the perfect excuse to make these peaches and cream muffins 🤤🤤 the full recipe is below 👇 Ingredients for 6 jumbo muffins or 12 regular size For the crumble 1/3 cup flour 2 tablespoons sugar 1 tablespoon brown sugar Dash of cinnamon 3 tablespoons butter melted Mix the dry ingredients together in a small bowl then mix in the butter For the muffins: 6 tablespoons butter - melted 1/2 cup sugar 1/4 cup brown sugar 2 eggs (room temp) 1/2 cup whole milk (room temp) 1/2 cup peach greek yogurt or plain 1 3/4 cup flour (spooned and leveled) 2 tsp baking powder 4 peaches, peeled and diced For the “cream” 6 oz cream cheese softened 1/4 cup sugar (Combine these in a small bowl until smooth) Directions for muffins: preheat oven to 425. mix butter + sugars in a medium bowl. Mix in the eggs for a couple minutes. Whisk in milk + Greek yogurt. Add in the flour and baking powder - gently stir on top before whisking it into the wet mixture. Don’t over stir!! Fold in diced peaches. Scoop batter into muffin pan lined with papers - fill to the top. Sprinkle the crumble on top. Place in the oven and bake for 10 minutes. turn temp down to 350. Bake for another 8-10 minutes or until muffins bounce back when touched gently. Let cool for about 10 minutes. Use a frosting tip or a teaspoon to scoop out the center of each muffin. Instructions

For the crumble

Step 1
Mix the dry ingredients together in a small bowl then mix in the butter

For the muffins

Step 2
Preheat oven to 218 degrees Celsius
Step 3
Mix butter and sugars in a medium bowl
Step 4
Mix in the eggs for a couple minutes
Step 5
Whisk in the milk and Greek yoghurt
Step 6
Add in the flour and baking powder - gently stir on top before whisking in to the wet mixture (Don’t over mix!)
Step 7
Fold in diced peaches
Step 8
Scoop batter into muffin pan lined with papers - fill to the top
Step 9
Sprinkle the crumble on top
Step 10
Place in the oven and bake for ten minutes
Step 11
Turn temperate down to 177 and bake for another 8-10 minutes or until muffins bounce back when touched gently

Let cool for about ten minutes

Use a frosting tip or teaspoon to scoop out the center of each muffin

Use a spoon or piping back to fill the center with cream
