Ingredients

0.25Zucchini

0.5Cucumber

1 TbspRed onion
chopped
1 TbspRed wine vinegar
1 TbspFresh lemon juice
1 dashBlack pepper
2 sliceWhole-grain bread
2 TbspAvocado
mashed
3 ozTurkey breast
cooked
1 handfulBaby spinach
1 cupVegetable sticks
carrot, celery, cucumber, bell pepper
3.5 ozFruit
any type, 1, small piece
Instructions
Step 1
Grate zucchini and cucumber, or slice into thin rounds or ribbons. Toss into a bowl along with onion, vinegar, lemon juice, and pepper. Mix to combine. Allow to sit whilst making sandwich, or longer if possible.
Step 2
Spread one slice of bread with avocado and season with pepper. Place turkey on top, followed by baby spinach.
Step 3
Drain any excess liquid from the pickled cucumber mix or use tongs to place mix on baby spinach. Top with second slice of bread.
Step 4
Enjoy sandwich along with veg sticks and a piece of fruit, or save for an afternoon snack.
Step 5
TIP: The longer you allow the pickled salad to sit, the more the vinegar will soak in for a stronger flavor.
