Instructions
Step 1
Heat olive oil in skillet and add diced peppers, onion and garlic. Sauté foe 3-5 minutes. Push to one side of the pan and add ground beef. Cook until no longer pink. Stir all together.
Step 2
Drain and rinse kidney beans, add to skillet with taco seasoning and tomato sauce. Cook for a few minutes. Add rice and beef broth, bring to boil and reduce heat to low, cover and simmer until liquid is absorbed. Sprinkle cheese on top, cover until melted.
