Pork Adobo with Potatoes (Filipino)

Can be made with either pork or chicken or both

Instructions

Step 1
Mix soy sauce, vinegar, and water in a bowl or cup, set aside.
Step 2
Heat oil in a pan or wok
Step 3
On medium heat, sauté the garlic for 30 seconds
Step 4
Add the pork or chicken and whole peppercorn. Cook for 4-5 minutes
Step 5
Pour in the soy sauce, vinegar, water mixture
Step 6
Add bay leaves and bring to boil. Simmer covered for about 40-60 minutes
Step 7
Add potatoes for the last 10-15 minutes of cooking
Step 8
Add salt to taste
Step 9
Enjoy with rice!
