Instructions

Step 1
Mix water, yeast, and sugar
Step 2
Let mixture stand for 5 minutes
Step 3
In a large bowl, mix 3 cups flour with 1 tablespoon salt
Step 4
Add yeast mixture and combine well
Step 5
Stir in oil and 1 to 1.5 cups of flour. Start with 1 and add more is dough is sticky
Step 6
Knead dough well for 10 minutes
Step 7
Place dough in a lightly oiled bowl, turn dough to cover in oil. Seal bowl and let rise in warm place for 1 hour or until doubled in size
Step 8
Punch dough down then return to floured surface
Step 9
Divide dough into 2 to 4 pieces, this will determine how large your loafs are. Roll each pieve into a log roughly 10-12 inches long
Step 10
Optionally, put 3-5 shallow slices into the top of the loafs
Step 11
Plave loafs on a greases baking sheet, cover loafs well, and let rise in a warm location for 30 minutes
Step 12
Preheat the oven to 400F with a shallow skillet on the bottom and an empty rack above for the bread.
Step 13
After oven is heated and dough has risen, place baking sheet in the over and 3-5 ice cubes in the shallow skillet. Close the oven door and bake 20-25 minutes. Avoid opening the door to check on the bread
Step 14
After removing bread from oven, optionally butter the tops of the loafs lightly. This step makes the crust softer
