Instructions

Step 1
To cook quinoa: 2 parts water (chicken broth) to 1 part quinoa. Bring to a boil then reduce heat until just barely boiling. Cook uncovered 12-15 mins.
Step 2
1 Tbsp Olive Oil in pan, add 1/4 c frozen corn and black beans
Step 3
When thawed add cooked quinoa. Stir. Sprinkle with Clubhouse TexMex seasoning to taste.
Step 4
Put quinoa mixture (hot or cold) in a bowl. Top with anything from your fridge!
