Spring Roll Salad with a Peanut Dressing🤝🍤🥗 you’re going to want to make this one!⬇️ Serves 2-3 people Peanut Sauce: 1/3 cup peanut butter 1 tbsp olive oil 1 tbsp soy sauce 1 tbsp honey 1 tsp rice vinegar 1 tsp sriracha or chilli sauce 2 garlic cloves 1 tsp fresh ginger 1/2 lime, juiced Water to thin (1-2 tbsp if needed) *Mix everything in a small bowl or use an immersion blended. Set aside) Shrimp: 1 lb shrimp, shells removed, pat to dry 1 tbsp olive oil Salt and pepper *Fry the shrimp on medium heat for 1-2 minutes per side in your olive oil, until pink and cooked through. *Season lightly with salt and pepper.
