Beef, Chorizo and Cheese Empanada Filling

Instructions
Step 1
Sauté onion in oil over medium-high heat for a few minutes.
Step 2
Add beef and chorizo and cook until beef is browned. Drain off fat drippings. (You can leave some fat but you do not want your mixture too wet.)
Step 3
Add garlic and sauté just for a few minutes.
Step 4
Add chipotles, tomato paste chili powder, cumin and black pepper.
Step 5
Add water and let simmer over medium heat, stirring well.
Step 6
Once everything has cooked through and most of the moisture. has dissipated, allow to cool
Step 7
Chill while making dough or overnight.
Step 8
Use @ 1 scant ¼ cup of filling per 6 inch empanada round. Add desired amount of cubes of cheese to each empanada.
For the adobo sauce
Step 9
Blend one can of chipotle in adobo in the food processor. 1 1/2 teaspoons purée = 1 Chile pepper in adobo sauce
