Keto lettuce “taco” wraps
Chorizo, pickled red onions, queso fresco, tomatoes and Roja sauce on lettuce wraps.

Instructions
Step 1
Put everything on the lettuce leaf and roll it up!
Step 2
PICKLED RED ONIONS:
Slice or dice a Red Onion. Add to boiling water for 1 minute. Drain, add to a glass bowl, and while hot add:
Lime juice or apple cider vinegar. 1 tbsp sugar. Pinch of cayenne pepper. Pinch of salt. Cover with Saran Wrap, pushing it down onto the top of the onions to make sure they are covered in juice. Refrigerate for a couple of hours and red onion will turn a bright shade of pink.
