Ingredients

½ cuplow fat unsalted butter
softened, it makes them more moist and not as buttery

¾ cupgranulated sugar

1egg
large

1 teaspoonvanilla extract

1zest of lemon

2 tablespoonsfresh lemon juice

2 cupsall-purpose flour

½ teaspoonbaking powder

¼ teaspoonsalt

½ cupdried cranberries

½ cupwhite chocolate chips

Instructions
Step 1
In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
Step 2
Beat in the egg, vanilla extract, lemon zest, and lemon juice until well combined.
Step 3
In a separate bowl, whisk together the flour, baking powder, and salt.
Step 4
Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
Step 5
Fold in the dried cranberries (and optional white chocolate chips or nuts, if using).
Step 6
Drop spoonfuls of cookie dough onto the prepared baking sheet, spacing them a couple of inches apart.
Step 7
Gently flatten each cookie dough ball with the back of a spoon or your fingers.
Step 8
Bake in the oven at 350°F/175°C for 10-12 minutes, or until the edges are lightly golden.
Step 9
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
