Step 1
Tear the spinach into bite size pieces and place in a large bowl. Add in cucumbers, strawberries, and mandarin oranges. Toss to combine.

In a small bowl whisk together the poppy seed dressing until combined.

Pour the half of the dressing over the salad and toss to coat. Top with honey roasted sunflower seed kernels. Serve with extra dressing on the side as desired.
