this farro salad really tastes like spring. It's very refreshing, healthy, satisfying, and also vegan friendly.

Instructions

Step 1
Fill half pot with water and place it on the heat. While you wait that the water starts to boil, rinse a couple of times the farro.
Step 2
on another pan, add 1 tbsp of evo oil, and cook the peas for around 10 minutes. Then, put it aside.
Step 3
By then, the water should have started to boil, so add the farro in the pot and cook it for 20 minutes
Step 4
Wash the veggies and the strawberries and cut all ingredients (except arugula) in small pieces. Then add everything into a bowl, maybe leaving out one strawberry to use it as topping
Step 5
When the farro is ready, add it and the peas into the bowl with the other ingredients, add one 1 tbsp of evo oil and mix everything.
Step 6
Plate up, add the leftover strawberry on top, and finally, enjoy !!
