Ingredients
4 servings
2 cupstrawberries
hulled and halved or quartered
1 ½ tablespoonlow-fat Greek yogurt
2 teaspoonchia seeds
¼ teaspoondijon mustard
2 ½ tablespoonmild olive oil
2 cuprotisserie chicken breast
shredded, skin and bones discarded
¼ cupsliced almonds
toasted
1 ½ tablespoonapple cider vinegar
1 teaspoonshallot
minced
8 cupbaby spinach
1 ½ tablespoonhoney
Instructions
Step 1
1. Finely chop one strawberry and place it in a small mixing bowl. Add the vinegar, honey, yogurt, chia seeds, shallots, mustard and salt and whisk until everything is well combined. Gradually whisk in the olive oil in a slow, steady stream.
Step 2
2. Divide the spinach among four shallow bowls. Top with the chicken, strawberries and almonds. Drizzle salads with dressing and serve.
