Seasonal Blackberry Cake: Incredibly delicious, it's best enjoyed with butter cream or jam, along with a cup of tea. Be sure to add lemon when handling blackberries to prevent oxidation. Serve it after it has cooled to room temperature, not directly from the fridge.

Instructions

Step 1
Using a cocktail mixer or a regular egg beater, whisk the eggs with the vanilla and vinegar at low speed.
Step 2
Once the egg mixture turns white, add the sugar all at once and continue to whisk for about two minutes until the mixture becomes creamy.
Step 3
Add the vegetable oil or butter, and continue to mix while gradually adding the milk. Keep whisking for another minute, adding the yogurt if using, until the ingredients are well combined. Then, stop the mixer.
Step 4
After sifting the flour, baking powder, and salt, gradually add the dry mixture to the liquid mixture while continuously mixing.
Step 5
Once you see the flour blending with the mixture, add the remaining quantity in the same manner until all the ingredients are well combined.
Step 6
Make sure there are no lumps in the mixture.
Step 7
Grease the baking pan with vegetable oil, butter, or flour thoroughly.
Step 8
Pour the mixture into the pan and place it in the oven at 180°C (350°F) with the heat coming from the bottom. Bake for 45-55 minutes, depending on your oven.
Step 9
Check for doneness before turning off the oven.
Step 10
After it's done, allow the cake to cool outside the oven.
