Instructions
Step 1
- Preheat oven to 220°C/Gas 7. Place a 28 or 30cm skillet in the oven to preheat.
Step 2
- Mix together the chickpea flour, salt & pepper. Gradually whisk in 325 ml (11 fl oz) lukewarm water until the mixture is smooth. Stir in half the olive oil.
Step 3
- Let stand until the oven is ready. When ready, add the remaining olive oil to the hot skillet.
Step 4
- Stir the rosemary into the batter and pour it into the hot skillet. Return to the oven and bake until firm and set all round, about 20-25 mins.
Step 5
- Remove from the oven and let cool in the pan briefly. Turn out, cut into slices, then garnish with more sea salt & rosemary to serve.
