Peanut stuffed zucchini boats

This is a recipe I'm trying to remember. I haven't made it in over 10 years and can't find the recipe again. Here goes nothing.

Step 1
Cut zucchini in half length wise
Step 2
Use a spoon to scoop out hollows done the center of each zucchini piece, reserve removed parts
Step 3
Place zucchini boats in an oil sprayed Pyrex casserole dish.
Step 4
Brown ground beef (feel free to add onion and or garlic)
Step 5
Add zucchini to beef and continue to cook.
Step 6
Add spices and stir
Step 7
Add Tom sauce and peanut butter, stirring to combine. Cook until peanut butter is melted and combined.
Step 8
Take off heat and add dry peanut pieces.
Step 9
Scoop filling to fill zucchini boats
Step 10
Bake in 350 oven for 30 minutes.
