Unstuffed Peppers
Dice peppers. Cook down peppers on med heat in butter/olive oil. In separate pan season (to taste) and cook ground beef. Once peppers are soft add seasonings and garlic. Pour in diced Tomatos and add browned ground beef. Add tomato juice and bring to simmer. Turn heat down to low medium and work in minute rice. Cover and allow rice to absorb juice (10 min). Turn heat to low, add shredded cheese and cover until cheese is melted. Enjoy!

28 ozcan petite diced tomatoes

32 oztomato juice
enough to cover/soak the rice, If storing, the rice will continue to absorb an extra juice

2 ½ cupsminute rice

12 ozshredded cheese
quesadilla or mont jack

Step 3
In separate pan season (to taste) and brown ground beef.
Step 4
Once peppers are soft add seasonings and diced tomatoes.

Add tomato juice and bring to simmer.

Turn heat down to low medium and work in minute rice.
Step 8
Cover and allow rice to absorb juices (10-12 min).
Step 9
Turn heat to low, add shredded cheese and cover until cheese is melted. Enjoy!
