Spaghetti Bolognese is truly a classic and this is a very simple recipe ! Very easy to follow and rich with loads of flavor ! It will be clean plates all around ! This will serve 6 medium portions or 4 large

Instructions
Step 1
Add some olive oil to a hot pan then add finely diced onion carrot and celery and sweat until soft


Step 2
Add diced pancetta ( use Smokey bacon if you can’t find pancetta ) then add either 500 grams of ground beef or a ground beef pork mix . Fry that until the water cooks out and it starts to color

Step 3
Add a dash of wine stir through and leave it evaporate for a minute then add some of the hot beef broth to 200 g tomato paste to thin it out and add that to the pan . Season with salt and pepper then slowly add the rest of the beef broth then lower the heat to low cover and simmer for about 40 minutes checking occasionally



Step 4
Cook spaghetti in salted boiling water until al dente then add to the bolognese with some pasta water and serve ! I like to add some Parmesan on mine and basil ! Enjoy
