Apple Bran Muffins with Crumble Topping

A quick easy muffin recipe that uses either homemade or store bought apple sauce. The crumble topping is optional but makes these muffins taste like a coffee cake.

Ingredients
12 servings
1 3/4 cups all- purpose flour
½ cupsgranulated sugar
1 Tbspbaking powder
¼ tspsalt
2 tspground cinnamon
1 tspground cloves
1 cupapple sauce
½ cupgreek yogurt
or sour cream
1egg
¼ cupvegetable oil
¼ cupapples
peeled and diced, optional
Crumble topping (optional)
Instructions
Step 1
Preheat oven to 400°F.
Step 2
In medium bowl, mix together flour, sugar, baking powder, salt, ground cinnamon and ground cloves. Set aside.
Step 3
In a large bowl, mix together bran flakes cereal, apple sauce, yogurt or sour cream, egg, and oil. If using diced apples stir those in now.
Step 4
Add flour mixture, stirring only until combined.
Crumble Topping
Step 5
Mix flour, sugar and cinnamon.
Step 6
Pour melted butter over top while stirring with a fork to create a crumbly texture. You don’t want this to resemble a dough, more of a crumb texture.
Step 7
Spoon batter into 12 large muffin tins, coated with non-stick cooking spray or lined with muffin papers. Top with a sprinkle of crumble topping if using.
Step 8
Bake at 400°F for 25 minutes or until browned and firm to the touch. Serve warm. May be frozen.
