Step 1
In a bowl add the flour, water, salt and oil. Start working it with a wooden spoon and once its cold enough to handle work with your hands, until a soft dough is formed. Let it rest for at least 30 minutes.
Step 2
Prepare the filling by boiling the peeled potatoes for 20 minutes (until very tender and cooked through). Mash them in a plate with a fork and add quark. In the meantime, chop the half onion and quickly caramelise it by cooking it on high heat in a pan with some oil. Add that and a pinch of salt to the potatoes
Step 3
Roll out the dough on a floured surface. With a glass or any round object, cut the individual pierogi shapes. Fill each one with the filling (how much will depend on how big your shapes are) and close with your hands (use a fork if not closing properly).
Step 4
Finally, boil in some water for 30 seconds to 1 minute and transfer to a hot pan to pan-fry for 2-3 minutes. Enjoy!
